This house dates from 1780, before machine cutting of timbers.

This hand cut timber explains why there is some undulation of the roof slopes as viewed from outside.

Over the lifetime of the building the timber has probably dried out, shrunk and distorted a bit, making the movement outside more pronounced.

This does not always mean the roof is unsound. More often than not there is no problem, and it can be argued that character is added to.
